Overview

Georgia's Paddock Shiraz represents approximately half of Jasper Hill's production. For the 2025 vintage, fruit from Georgia's Paddock was supplemented with grapes grown by friends within the Heathcote region, resulting in a fresh, generous expression built around vibrant red fruit, spice and structured tannins.

Vineyard

Jasper Hill's soils are derived from ancient Cambrian basaltic rock, approximately 500–600 million years old. In Heathcote, these rusty-red, gravelly loams can reach depths of up to four metres, combining good drainage with strong moisture-retention capacity. The soils occur along a narrow, discontinuous strip between two north–south faults, contributing to their complex mineral composition.

Winemaking

Fruit is harvested across several weeks, allowing some parcels to be picked early, the majority at optimal ripeness and a smaller portion at the riper end of the flavour spectrum. Individual tanks are fermented, pressed and matured separately in oak before the final blend is assembled.
