夏米雷城堡俯瞰着夏米雷村，建于 18 世纪。这座优雅的城堡受到意大利建筑风格的影响，俯瞰着法式花园。夏米雷城堡建在岩石岬角上，在默丘里葡萄园中占据着独特的位置。如今，酒庄由 Amaury et Aurore Devillard 拥有和经营，他们是这个家族在勃艮第酿酒的第五代人。1934 年，他们的祖父 Marquis de Jouennes 决定将夏米雷城堡的葡萄酒装瓶在酒庄。他的女婿 Bertrand Devillard 继续他的工作，并在默丘里最好的风土中扩大了酒庄的规模，目前已达到 95 英亩。
