About This Whisky
Sullivans Cove SC0749 is a rare Tasmanian single malt matured in a French oak ex-white wine cask. Distilled in July 2018 and decanted in February 2026, this single cask release yielded just 457 bottles and was bottled at 47.5% ABV.
French oak ex-white wine casks bring considerable tannin and structure, demanding careful maturation and cask management. In SC0749, the result is a precise and vibrant expression with freshness, finely integrated oak and a distinctive progression from lively spice through honeyed cereal notes and gently tart tropical fruit.
Tasting Notes
A vibrant and finely structured whisky, opening with lively ginger-snap spice before developing delicate honeyed oatmeal biscuit notes and gently tart tropical fruit. The French oak is well integrated, bringing structure and drive without overwhelming the spirit, leading into a fresh, persistent and remarkably precise finish.
About the Distillery
