2022 Polperro Estate Chardonnay 750ml

This Chardonnay opens with enticing aromas of Meyers lemon, ripe red apple, and honey blossom. On the palate, it showcases similar fruit characteristics, marked by a concentrated fruit weight yet retaining a vibrant freshness. The mid-palate reveals a lovely texture, highlighting a beautiful balance of flavors.

Winemaking:

The winemaking process begins with handpicking the fruit in three batches, followed by whole bunch pressing using a gentle champagne press cycle. No enzymes or sulfur are added at the press tray, and the juice undergoes oxidative handling to eliminate oxidative enzymes early in the process. After ambient fermentation in barrel with full solids and minimal sulfur, the wine completes malo-lactic fermentation. A small amount of sulfur is added in spring before the wine is allowed to mature in barrel for 12 months. It is then racked off gross lees, minimally filtered, and bottled without finings.

The final wine is a testament to its careful crafting, offering a rich and textured experience with lingering flavors.
