2022 BINDI Kostas Rind Chardonnay 750ml
Less than 20% of the usual volume made, the 2022 BINDI Kostas Rind Chardonnay 750ml is a unique expression of Chardonnay. This wine is crafted without the addition of yeast, nutrients, or enzymes. After pressing, a small amount of sulphur is added to the juice in the barrel, and fermentation commences naturally after about five days.
The wine ages for 10 months on its yeast lees in French barrels, with 25% of the barrels being new. It is bottled in late February. The wine presents typical aromas of grapefruit and lemon, complemented by floral notes of jasmine blossom. With time, it reveals creamy, savoury, and spicy nuances.
The palate is full and fresh, with a chalky, zesty character. It is harmonious and smooth, promising to build complexity and texture over five years of careful cellaring.
