Inspired by the iconic jet that took it to the world. The rich and powerful Bin 707 Cabernet Sauvignon, our first commercial release of a single cabernet-based wine, is linked to Max Schubert’s dream of making a great Australian red wine that could last at least 20 years. During the â€?0s and early â€?0s cabernet sauvignon was mostly used for blending, but Schubert’s breakthrough with the varietal as a stand-alone wine came in 1964 with inaugural vintage. Early Bin 707s were typically open fermented under wax-lined header boards and matured in seasoned old oak (rather than new oak). The wine was not made from 1970 to 1975 (when fruit was directed to other wines) nor in 1981, 1995, 2000, 2003, 2011 or 2017 (when fruit of the required style and quality was not available).

Vintage Notes
Above average winter rainfall led into a promising vintage, which was characterised by mild conditions up until February, followed by hot weather conditions throughout March and April. South Australia fared well and produced wines of elegance and intensity.
Ageing
This wine was aged for 15 months in new American oak hogsheads.
Producer Tasting Notes
COLOUR Deep and dark with a dense core. NOSE The nose shows fruit to the fore, although much more: cassis, raspberry coulis, an underlay of red liquorice, black olive, soy and artefacts of well hidden oak. Youthful, lively and alluring! PALATE Textured, lush and chewy, with an even coating of talc-like tannins, the palate has a 'compression' of flavour, without heaviness or overextraction... marmalade, orange and tangerine citrus notes align with those that decry Cabernet. The wine is poised and balanced, with highly stylised and crafted oak, and highly defined and structured, showcasing the 'finest cut' of ripe, low yielding Cabernet.
