Penfolds official tasting notes, 2002

Colour: Deep plum red.
Nose: Distinctively Cabernet โ€” leafy cassis fruit to the fore, with cool-climate notes from Coonawarra and Bordertown. A background of cedary oak highlights judicious use of new French and American barrels.
Palate: Balanced palate with lingering sweetness and ripeness of blackcurrant fruit, laced with black olive and a touch of mint. Fine-grained tannins provide grip without aggression, offering structure and poise.

About the Wine

Introduced in 1993, Penfolds Bin 407 Cabernet Sauvignon was created by John Duval as a companion to the flagship Bin 707.
It follows the Penfolds philosophy of multi-region blending, delivering varietal purity, depth, and approachability.
The 2000 vintage highlights the quality of fruit from Coonawarra and Bordertown, producing a wine of elegance and balance.

Vintage Notes (2000)

Coonawarra experienced a cool spring with good rainfall, followed by dry, hot conditions from January to March.
These weather shifts resulted in low yields but excellent flavour concentration, especially in Cabernet Sauvignon from Bordertown.
