 Critic tasting note: "(2000) Very dark crimson/black. Seriously deep and concentrated cassis, cedar and mint on the nose. Lots of typically Australian eucalyptus and mulberry. On the palate tight and classy fruit with a slick of vanillin oak. Quite full bodied and very concentrated, this has real quality and avoids the excess of the previous wine. Ripe, classy seam of fruit pushes through to a long finish that is dense and nicely focused." - 90/100, Tom Cannavan

Inspired by the iconic jet that took it to the world. The rich and powerful Bin 707 Cabernet Sauvignon, our first commercial release of a single cabernet-based wine, is linked to Max Schubert’s dream of making a great Australian red wine that could last at least 20 years. During the â€?0s and early â€?0s cabernet sauvignon was mostly used for blending, but Schubert’s breakthrough with the varietal as a stand-alone wine came in 1964 with inaugural vintage. Early Bin 707s were typically open fermented under wax-lined header boards and matured in seasoned old oak (rather than new oak). The wine was not made from 1970 to 1975 (when fruit was directed to other wines) nor in 1981, 1995, 2000, 2003, 2011 or 2017 (when fruit of the required style and quality was not available).

Vintage Notes
The 1997 vintage enjoyed a cool summer that was followed by warm weather in late March and April. Winter rainfall had been excellent in most districts and good rains continued into September and past bud-burst.

Producer Tasting Notes
COLOUR Opaque, deep red. NOSE Ripe red berries together with varietal, leafy cassis fruits. Stylish integrated oak, hints of smokiness and subtle cedar aromas. PALATE Rich and ripe with dark cherry and raspberry fruit flavours, some dark chocolate and integrated smoky oak.
